Dear Sir:
An inspection of your retail food establishment on October 9, 1985 revealed the
following changes from your plan received by the Northampton Board of Health on
August 2, 1985:
(1) A slop curb has replaced the slop sink designated in the
submitted plan.
(2) The utensil sink has been relocated from the back storage
room to the forward section where the slop curb and restrooms
are located.
(3) A single compartment sink has been installed in place of the
designated utensil sink.
(4) Restroom room doors do not have required door closures.
Both the replacement of the slop sink with a slop curb and the relocation of the
utensil sink are acceptable under the State Sanitary Code 105 CMR 590.000.
However, the single compartment sink installed where a utensil sink has been
designated in the submitted layout is unacceptable. Utensil and equipment washing
sinks must have either two or three compartments to meet approved manual cleaning
and sanitizing requirements (105 CMR 590.013) .
Please be advised that a Retail Food Establishment Permit will not be issued by
the Northampton Board of Health until a two or three compartment utensil sink
has been installed and approved door closures have been installed.
