Beerology will be a retail store specializing in homebrewing supplies as well as providing
classes in how to do homebrewing.
There will be no meat, fats, or other cooking at Beerology.
The cooktop burners will be used only for boiling water and a sugar syrup called "wort."
We would expect an average of no more than four "brews" per week as part of our brewing
education classes as well as some inhouse recipe development.
Each brew session would produce 510 gallons of finished wort (a nonalcoholic sugar syrup).
Finished wort will not go down the drain; some of it may be fermented in the basement in
closed containers, but will not ever be sold.
Estimated water disposal per brew would be 1020 gallons. Waste water may include small
amounts of brewing cleanser and sanitizer—PBW and Star San, both produced by Five Star
